Ingredients

1 tablespoon olive oil
1 large onion, chopped
2 carrots, peeled and chopped
2 chopped celery sticks
2 cloves of minced garlic
1 large sweet potato (approximately 2 cups), chopped
2 cups peeled pumpkin, chopped
2 cups cauliflower florets, chopped
2 cups sliced ​​cabbage
1 28 ounces diced tomato
6 cups of vegetable soup
2 teaspoons Italian seasoning (or a mixture of dried parsley, basil, oregano, etc.)
1/2 teaspoon ground black pepper
1 teaspoon sea salt
2 tablespoons chopped parsley
Instructions for use

Heat the cauldron over medium heat and add olive oil.
Add the onion, carrot and celery and cook for 3-5 minutes until the onion becomes translucent.
Add the garlic and cook for 1 minute.
Add sweet potatoes, squash and cauliflower and cook for 5 minutes.
Place the cabbage on top, cut it into diced tomatoes, vegetable soup and spices, then stir.
Bring to a boil, then simmer and heat over medium heat for 30 minutes.
